Roasted Asparagus

I love it when spring is on it's way and the grocery stores start selling asparagus for a reasonable price. Asparagus is my all time favorite vegetable and this is my favorite way to cook it.

Snap off the hard ends.

If you have really thick asparagus you can peel it.
But, it is a lot of work and isn't something you have to do.

Place the asparagus on a parchment paper lined baking sheet.

Drizzle with extra virgin olive oil.

Extra Virgin, can people be extra virgin?

Just wondering!

Anyhoo, place in a preheated, 400 degree oven for about 10 minutes.

Halfway through give the pan a shimmee shake

to make sure the whole thing is coated with the oil.

After it's done roasting sprinkle with kosher salt and freshly ground black pepper.

Here are some other variations.....

Dice the asparagus, add diced tomatoes

and grated Parmesan cheese.

I love tomatoes, so very much. mmmmm

Sprinkle with citrus zest and toasted, slivered almonds.

This says SPRING!

Drizzle with sesame oil and sprinkle on toasted sesame seeds.

My favorite is plain, roasted, with s&p.

A drizzle of butter is good too 'cuz...

everything's better with butter!
