This picture really doesn't do the sandwich justice. It is supposed to be a picture of a tuna fish sandwich with pickle relish, grated carrots & almonds, but instead it looks like white blobs on wheat. Occasionally I enjoy a tuna salad or egg salad sandwich for lunch, but in the last few years I'm trying to get more creative with the things I add to them. I do this both for taste and to bump up the nutritional content. Some of the things I like to add to my sandwiches are grated carrots, diced zucchini, diced radishes, craisins, almonds and sunflower seeds (no, not all at once, silly). It can be a great way to use up that last little bit of produce that is going to go bad soon. I'm thinking right now that a sandwich with some diced apples and nuts could be a tasty Autumn lunch. I'm told it's no longer summer (in Las Vegas it's hard to tell!). So get creative with your sandwiches and let me know if you have any groovy combinations.
