
Ham and Cheese Quiche with Potato Crust
15 oz package frozen hash browns, thawed and squeezed dry
(I just use half of a 30 oz. bag)
1/4 c. butter, melted
4 oz. Canadian style bacon, diced
1 c. Mexican blend shredded cheese
(or whatever cheese you like)
3 large eggs
1/4 + 1/8 c. half and half OR cream OR milk
(I've tried all three options, they all work. Use what you have)
salt and pepper
Preheat oven to 425 degrees
Lightly grease a 9 in pie plate. Firmly press potatoes into bottom and sides of pie plate, forming a crust. Pour melted butter evenly over potatoes. Bake 30-35 minutes, or until lightly browned.
Reduce oven temperature to 350 degrees. Sprinkle Canadian bacon and cheese evenly over potato crust. In a small bowl, whisk together eggs, milk, and salt and pepper. Pour over bacon and cheese. Bake 40 minutes, or until puffed and set.
