strawberry bread

I am horrible at baking, but this is one recipe that has turned out great every time I make it. It is easy to throw together and delicious!! I modified this recipe from one I found on a wonderful blog called The Sister's Cafe, please go check them out.

Strawberry Bread

1 1/2 c flour

1 c sugar

1/2 ts baking soda

1/2 ts salt

1/2 ts cinnamon

dash of freshly grated nutmeg

2 eggs

1/2 c & 1/8 c canola oil

1 c fresh strawberries, cut up into small pieces

Preheat oven to 350

Mix flour, baking soda, cinnamon, nutmeg and salt in a large bowl. Add eggs, sugar and oil. Stir until moist. Carefully add strawberries. Batter will be thick. Spoon into greased loaf pan ( I just use non stick spray). Bake 1 hour. Cool in pan 10 minutes. Remove from pan and cool on rack.

Makes one loaf
