caramel chex

Looking for a snack to have around for the kids while they're home on winter break? Or how about a fast and easy hostess gift? Want to bring something over to your new neighbors? Have I got a yummy and easy recipe for you! I adapted this recipe from one on the Chex website. We really liked it and I think you will too!

Caramel Chex
8c Chex cereal
(I used wheat Chex because it has a little more fiber in it)
1/3c packed brown sugar
2tb lt. corn syrup
1ts vanilla

Preheat oven to 250 degrees. Put all ingredients except cereal in saucepan. Boil over medium heat stirring frequently until it's all combined. Place cereal in a large bowl. Pour mixture over cereal, stir so cereal is evenly coated. Place on a baking sheet and cook for 45 minutes stirring every 15 minutes. Allow to cool. Store in an airtight container.

Here it is fresh from the oven. mmmmm
